Vegan chilli

I've been taking part in a 'Go Vegan' week that the Vegetarian and Vegan Society have been running at uni, which has been so much fun! It's made me cook all kinds of new things, so I thought I'd share some of the recipes that I've learned. This vegan chilli is absolutely delicious and pretty easy to make, so I'd definitely recommend it.


Ingredients

  • 1 onion
  • 1 can of kidney beans
  • 1 can of butter beans
  • 1 can of sweetcorn
  • 1 jar of tomato pasta sauce
  • Tomato purée 
  • Chilli powder
  • Paprika powder
  • Cumin
  • Baby potatoes
  • Tomatoes
  • Spring onions

Method

  1. Cut the baby potatoes into halves and steam them in a colander.
  2. Chop the onion and sauté in a saucepan with oil until translucent.
  3. Drain the kidney beans, butter beans and sweetcorn before adding them to the pan.
  4. Add the pasta sauce, purée, a bit of boiling water and the tomatoes, and stir well.
  5. Add the chilli powder, paprika powder and cumin.
  6. Leave to simmer for 15 minutes.
  7. Add salt and pepper to taste, mix potatoes in with chilli mix and garnish with spring onion.
