Tomato & mushroom pasta

Another great recipe that I learned over 'Go Vegan' week is this deliciously filling tomato and mushroom pasta. Give it a go and see what you think!
Ingredients
- Pasta
- Plum tomatoes
- Chestnut mushrooms
- 2 cloves of garlic
- 3 teaspoons of tomato puree
- 2 teaspoons of brown miso paste (optional)
- 1 teaspoon of paprika
- Spinach (optional)
Method
- Chop the mushrooms and tomatoes.
- Put the pasta on to cook - let it boil then leave to simmer.
- Peel and chop the garlic and heat in a pan for a minute before adding the tomatoes, mushrooms and paprika.
- Leave to cook for a few minutes then add the tomato puree and miso paste (personally, I don't like to have too much miso paste in my sauce, but feel free to have as much or as little as you like).
- When the pasta is cooked, drain it and stir in the sauce.
- Add a handful of spinach to garnish if you want to!
