Tomato & mushroom pasta

Another great recipe that I learned over 'Go Vegan' week is this deliciously filling tomato and mushroom pasta. Give it a go and see what you think!




Ingredients

  • Pasta
  • Plum tomatoes
  • Chestnut mushrooms
  • 2 cloves of garlic
  • 3 teaspoons of tomato puree
  • 2 teaspoons of brown miso paste (optional)
  • 1 teaspoon of paprika
  • Spinach (optional)

Method
  1. Chop the mushrooms and tomatoes.
  2. Put the pasta on to cook - let it boil then leave to simmer.
  3. Peel and chop the garlic and heat in a pan for a minute before adding the tomatoes, mushrooms and paprika.
  4. Leave to cook for a few minutes then add the tomato puree and miso paste (personally, I don't like to have too much miso paste in my sauce, but feel free to have as much or as little as you like).
  5. When the pasta is cooked, drain it and stir in the sauce.
  6. Add a handful of spinach to garnish if you want to!
