My favourite summer salad

Now that it's well and truly summer, and following on from our house barbecue the other week, I've really been in the mood to try out some new salad recipes. Perfect for evenings sat outside, to serve at a barbecue or just as a light and healthy dinner, salads are super easy to make and 100% satisfying. I found this particular recipe on Pinterest from a blog called Natasha's Kitchen, so do be sure to check her out as well. It's got a perfect combination of tastes and textures, along with two of my favourite things in the world: prawns and avocado. Give it a go!
My (new) favourite summer salad
Ingredients
1 small tub of cherry tomatoes
1/2 cucumber
1 red onion
1 can of sweetcorn
1 avocado
2 small romaine lettuces
Prawns
Garlic
Cajun spice
Olive oil
Lemon
Coriander
Method
1. Fry the prawns in a saucepan in some butter, chopped garlic and a pinch of salt. Sprinkle the cajun spice over the prawns as they cook. When they are done, place them to cool on a plate.
2. Chop the romaine lettuces and use them to line the bottom of your salad bowl.
3. Chop the rest of the veg and add it on top - I followed Natasha's lead and did mine in rows for the aesthetic, of course.
4. To make the dressing, combine two tablespoons of olive oil with the chopped coriander and lemon juice. Add salt and pepper and drizzle the dressing over the salad, before tossing it all together.
I personally found that the dressing I made wasn't quite tangy enough for my liking, so when I had the leftovers of the salad the next day I added a French dressing that I bought from Tesco, which went really nicely too.
This salad is super easy to make (I've always found chopping veg very relaxing - especially if you put some good tunes on), and can last a good few days. I had a big bowl myself on the first day while my housemate had some as a side, and the following day I used it as a side with some salmon and new potatoes. It's also very versatile, so you can mix and match with your own favourite veggies if you so desire, and it's sure to be a winner at any barbecue this summer!
